RECIPE : Cheese Shortbread with 1057 Scottish Cheddar Cheese
With Easter this weekend, I wanted to make something for sharing. I love visiting people for a cuppa and a biccie; chatting, laughing, sharing over a tea and some shortbread. Yes shortbread is my biscuit of choice as I am a self confessed shortbread addict!
So it is with absolute joy that I bring you these delightful Cheese Shortbread biscuits. Let your imagination run wild - create traditional shortbread fingers or rounds or stars. This dough is short, easy to create shapes from and it can handle all the cheese you want to throw at it.
RECIPE : Cheese Shortbread with 1057 Scottish Cheddar Cheese
INGREDIENTS
200g Self raising flour
100g butter
120g 1057 Scottish Cheddar Cheese
Pinch of Salt
Smoked paprika (optional)
Poppy Seeds (optional)
Garlic granules (optional)
Sesame Seeds (optional)
METHOD
Mix together the flour, butter, 100g cheese, smoked paprika and good pinch of salt
The mixture will be vey short but bring it together, cover with cling film and place in the fridge for approx 30 minutes.
Meanwhile heat oven to 180 degrees fan.
Remove the dough from the fridge and cut into rounds, fingers or whatever you choose, about 1cm thick.
Place them in a non stick baking tin.
Get creative and add poppy seeds, garlic or sesame seeds to the top. I added extra cheese (and it was worth it). This is the extra 20g of cheese should you wish to use it.
Bake in the oven for 10-12 minutes until cooked.
Let cool and eat!
This recipe makes about 12 shortbread rounds.
