DRINK : Salted Caramel Rum Hot Chocolate Recipe

With the weather changing and that definite chill in the air, I'm starting in on all the Autumn 🍂 feels. We’ve still got a whole month to go before Halloween but I couldn’t resist purchases of pumpkin items, especially this pumpkin mug from Homestores which works so well for my Old Mother Hunt Salted Caramel Rum Hot Chocolate.

I’m working with Old Mother Hunt, Scottish made rum and I couldn’t wait to make this SALTED CARAMEL RUM HOT CHOCOLATE. It’s perfect for a weekend night on the sofa, binging on Netflix with the duvet wrapped around you.

Salted Caramel is such a classic flavour combo and this recipe is super easy to make. It’s the Dulce de Leche that really gives this mugtail a smooth silky mouthfeel whilst the rum takes the hot chocolate up a notch giving it a lovely boozy kick.

This is one Autumn mugtail you’ll want to be making.

RECIPE FOR OLD MOTHER HUNT SALTED CARAMEL RUM HOT CHOCOLATE

Old Mother Hunt are a fairly new company created by a jobless airline pilot and a mum of two during lockdown. They had always wanted to start their own company, and like many of us, sometimes we need a push! This is what the pandemic provided. Matt and Becky had no option but to jump straight in, build a business which is now a successful company producing Scottish Rums. Their Spiced Rum, that I used in this recipe, has just won a Great Taste Award - and rightly so. It’s lush. I covered their full story on my blog last month - read it HERE.

Just in time for Christmas, they have produced two seasonal Rums - Winter Spiced packed with lots of cinnamon and orange and Vanilla & Coconut which would also work so well with this Boozy Hot Chocolate.

INGREDIENTS

25ml Old Mother Hunt Spiced Rum

2 tsp Dulce de Leche (available in Sainsburys) or thick caramel (Nestle Carnation)

150ml Whole Milk

Sachet of Hot Chocolate mix (I used Galaxy but Options would work well too)

Maldon Sea Salt

Anchor Cream Spray

Cinnamon

Marshmallows (optional)

METHOD

  1. In a small bowl, mix together the dulche de leche or caramel with the rum.

  2. Warm the milk in a saucepan until simmering.

  3. Remove from heat and add in your hot chocolate mix and stir until smooth.

  4. Place saucepan back on the heat and add your caramel and rum mix to your hot chocolate.

  5. Sprinkle in some sea salt.

  6. Pour into a mug and top with whipped cream or marshmallows and a dusting of cinnamon.

There you have it, a Salted Caramel Rum Hot Chocolate - pure boozy bliss!
