As food and drink pop-ups continue to surge in popularity as today’s consumers seek unique experiences, award-winning Radisson Blu Edinburgh launched two exclusive pop-ups for the Edinburgh Festival Fringe at the start of August. After all, it’s hungry – and thirsty – work packing in all the shows!
Daffy’s & Double Dutch Gin Den and the acclaimed Burger & Fringe made its hotly anticipated return to the Festival for the third year running have taken up residence within the luxury four star hotel, ideally situated amongst all the festival action on the Royal Mile.
Those looking for innovative gin cocktails will have a dedicated mixology team on hand at the striking botanical-themed Daffy’s & Double Dutch Gin Den where a menu of inventive cocktails are available to try, including the iconic Daffy’s D&T.
And for the ultimate refuel Burger & Fringe once again offers a menu of themed, handmade, freshly-prepared and chargrilled 100% fully prime Scotch beef burgers, each £9. In addition to the extensive burger menu there are lighter options such as soups and salads as well as a dessert menu of pudding winners.

With Head Chef Barath Kumar at the helm, Burger & Fringe’s burger menu includes Auld Reekie, a full-on meat feast treat containing beef, crispy bacon and pulled pork in a BBQ sauce with crispy fried onions and chilli mayo; the Edinburger with haggis and whisky mayo; vegetarian Fun-Guy which contains grilled mushrooms, halloumi cheese, spiced pepper and hummus; and vegan Fa-Laugh-el, a delicious and refreshing combination of smashed avocado with falafel, hummus and salad. Then there is last year’s best-selling Sticky Finger beef burger which comes in a glazed ring donut and contains candied bacon, spicy beef mayo, crispy fried onions. Other burger options include Smokin Hot Chicken, Blu Classic, Black and Blu and Spartan.
For those in search of lighter options the colourful Beet Salad (£9.50), vegan Green Goodness (£8.50) or Quinoa Salad (£9) will appeal. And who can resist a dessert. There’s Warm Chocolate Brownie with salted caramel sauce (£7.50), Baked Vanilla Bean Cheese Cake (£6.50) and a range of chocolate Sundaes for £7 to tempt.
And the Daffy’s & Double Dutch Gin Den a range of limited edition cocktails, all a nod to the Double Dutch founders, Joyce and Raissa are available including Girl Friday, Raissa Glass, Jump for Joyce and Roadtrip as well as the classic D&T.
