Fermented foods are foods that have been through a process of lacto fermentation in which natural bacteria feeds on the sugar and starch in the food creating lactic acid. This process preserves the food, and creates beneficial enzymes, b-vitamins, Omega-3 fatty acids, and various strains of probiotics.

At the Edinburgh Fermentarium they ferment vegetables naturally mixing traditional techniques with a modern twist to bring you delicious and healthy additions to your meals.
They hand make small batch, artisan, tasty and healthy fermented food. They have perfected a small colourful collection and they look and taste fantastic.

Fermented foods are big in other countries, but there are only a few makers in Scotland. These naturally fermented vegetables contain probiotics which means they are great for your guts and immune system. They are unpasteurised and contain no vinegar.

Edinburgh Fermentation is owned and run by Ruth Munro. It all started for Ruth when she went on a course learning how to make Korean Kimchi.  She then began making it for herself and friends, and it progressed into the small business that it is today. After being made redundant from her fashion design job, life coach Caroline Kirk helped her decide to take the next steps.

They make different varieties including :

  • Cracking Kimchi a Korean style fermented dish
  • Stoatin’ Sauerkraut with fresh turmeris and fennel
  • Braw Slaw – Beetroot, apple, cabbage, ginger, star anise and clove.

They also make weekly specials including Magic Mojito, Canny Curry Kraut, This Ginger’s no Minger, Oohyabeauty Onions and Smoking slaw to name a few and they are all delicious additions to any meal.

You’ll find Edinburgh Fermentation at Edinburgh Farmers Market, Castle Terrace and Leith Market, Dock Place; The Biscuit Factory Market and the Edinburgh and Haddington Food Assemblies. They’ve also recently started stocking Hanover Health Foods and hope to stock other shops soon; and hope to have their online shop up and running soon.

There are many health benefits to eating fermented foods.
-the bacteria pre digests the food, the resulting product is easier to digest. If you have trouble digesting raw fruits and vegetables, fermentation may be helpful for you!
-The bacteria in fermented foods produce more vitamins and nutrients as they digest the starches and sugars. They particularly produce B vitamins and vitamin K2.
80% of your immune system resides in your gut. A healthy gut = a healthy immune system. Adding fermented foods to your diet will help ensure a healthy gut!
-The lactic acid produced during fermentation helps healthy bacteria already present in your gut to proliferate. This leads to better gut health!
-By adding fermented foods to your diet, you can limit, if not completely stop, your sugar cravings!
